The charter boat covers your fishing license, so all you have to do is show up ready for a good time! Some fish have special regulations, including when you can keep them. If you don't know what to expect, ask the captain.
It's always wise to bring sunblock (non-spray), and sunglasses. Drinks are included, free of charge. Alcohol is allowed in moderation, but you should avoid hard liquor as well as glass bottles. There will be food and some light snacks available on board.
