Chef Charles The Fishing Chef invites you for an exciting fishing trip in Key Largo, Florida! Together with Captain Charles Maloney, you’ll explore inshore and offshore waters, reefs, as well as flats and have lots of fun fishing for many different prized species. Captain Charles isn’t only a lifelong angler but also a skilled cook with professional experience who can cook the fish you catch after the trip and send it to wherever you’re staying. Pay him a visit and have a terrific time on the water in Key Largo!
Your adventure starts on a restored 26’ World Cat catamaran that can sit up to 4 guests. The boat runs on twin 200 HP Suzuki engines, uses full-featured navigation technology, and has got a portable toilet. There’s also an ice-box to store your fish and drinks and a livewell to supply you with live bait. The captain’s son Jay is a first mate and he’ll be joining your trip as well.
The species you’ll target include Mahi Mahi, King Mackerel, Mangrove and Yellowtail Snapper, Bluefin Tuna, Great Barracuda, as well as Jack Crevalle. You can attract them by light and heavy tackle bottom fishing, deep sea fishing, trolling, and drift fishing, and you’ll keep the fish you catch. Kids are more than welcome to join in.
Captain Charles will provide all the rods, reels, tackle, lures, as well as fishing licenses, and he’ll even clean and fillet your catch for free. Before you leave, just make sure you have your snacks and drinks.

Couldn’t have asked for a better captain!!!
Afternoon bite on February 20, 2026 • 3 adults • 2 children
We spent the afternoon with Captain Charles….it was an amazing experience. Our family (Dad, Mom, son and two grandchildren) trolled for fish and then headed toward the reef. Captain Charles was absolutely amazing with all of us, but especially our 11 year old grandson and 8 year old granddaughter. We caught about 20 fish not counting the smaller ones that we threw back. Charles was great with communication before the trip and very patient during the excursion. Our grandson got a little seasick and Captain was helpful telling him what to do to feel better. Our granddaughter was scared at first, but after catching 8 fish, was so comfortable on the water!
Additionally, Captain Charles took so much time explaining what kind of fish we caught as well as explaining about the water levels, reefs and “ledge” to our grandson.
The cherry on top was the fact that Captain/chef Charles filleted, cooked and delivered our fish into fish tacos for our dinner. DELICIOUS!
We plan to book another trip with Chef Charles next year!

Loved the captain/crew but the boat was a bit disappointing

Captain and crew made this a very enjoyable trip and they put us on some good reef fish. The boat and rods could use some improvement as they were not the high standard I’ve grown accustomed to in charter fishing trips. It was not a huge impact on this trip as we didn’t go far off shore to find fun fishing. If you want a good time and a fun time catching fish I highly recommend but… not sure if I would want to go far off shore in that boat though. The chef/captain ended the trio with a delicious meal delivered to our hotel room. He’s a great cook!

Captain Kyle with Catch and Sea Charters (filling in for Chef Charles) was very knowledgeable and took us to three different fishing spots. We caught 6 different kinds of fish and were able to keep enough for fish tacos for dinner! Kyle is a really good cook too :)
