I love these fish---especially when they get big. Strong fish, classic looking. I like to eat them too. On board the Jennifer Lee I pride myself on how I care for the catch: I bleed the fish and then ice them down in a saltwater slush bath. This keeps the fish very cold. With blues I fillet them and cut out much of the dark muscle meat. I like broiled bluefish with mayo and capers. Tastes like summer, tastes like my childhood.
