Caught some good sized wahoo (not hand caught of course!) for the grill (steaks or fillets about 1-inch thick are ideal for even cooking without drying out). We recommend around 20 minutes in the refrigerator with citrus-herb marinade (lemon and lime zest and juice, minced garlic, fresh thyme, parsley, smoked paprika, and a touch of cayenne). Grill for approximately 3-4 minutes per side. The perfect post-fishing party!
